Vegan Delight: Veggie Lettuce Boats w/ Avocado aioli ! 


Some people think eating healthy means the food is bland. NOT TRUE! I’m all about flavor with everything especially my food. So here is a great recipe for lunch or dinner that takes under 30 mins to make and it’s nutritious, delicious and full of flavors that anyone can enjoy even if you’re not vegan !

Ingredients: 

  • Lettuce Boats 
  • 1 cup of Mushrooms 
  • 1/2 Red Onion 
  • 1 Red Bell Pepper
  • 1 Orange Bell Pepper
  • 1 bag of quinoa + rice mixture 

Avocado Aioli Sauce: 

  • 1 Avocado mashed
  • Mayo (vegan) 
  • Pinch of minced garlic
  • Dash of pink salt+black pepper
  • Squeeze of lemon juice

Boil quinoa and rice mixture in water, dash of salt and butter. Slice all veggies and salute in olive oil or vegan butter. Season with pink salt, pepper, garlic salt, slap ya mama Cajun seasoning, paprika. It only take a few minutes. Set aside. 

Mix all aioli ingredients in separate saucer. 

Then layer veggie mixture in lettuce boats, top with quinoa rice mixture and drizzle aioli sauce on top. These boats are finger licking good, so filling and good for anytime of day.
